homemade vegan apple cobbler

after an afternoon of apple picking what do you do? make an apple cobbler. here’s how i did it:

8 apples, peeled, cored and sliced and put in a medium bowl. add 1/2 cup pure maple syrup, 2 tbs cornstarch, 1 tsp cinnamon,1/2 tsp ground cloves and 1/2 tsp ground ginger and mix. bake at 425 for about 30 minutes.

for the topping i used the peach cobbler topping recipe from the  “isa does it” cookbook. ingredients listed in photo above. in a measuring cp mix non dairy milk of your choice (i used almond) and vinegar-set aside to curdle. in a lg bowl sift flour, baking powder & salt. stir in sugar. add coconut oil and cut into flour with a fork until large crumbs form. add the milk/vinegar combo and stir to combine. remove apples from oven after baking for 30 mins and sprinkle topping mixture over apples, then sprinkle the sugared cinnamon mixture and bake for an additional 20 mins.
