spaghetti squash


I love this super easy side dish. I carefully cut the squash in half lengthwise, scoop out the seeds and place face down on a lightly oiled pan. Roast in the oven at 350 for 30-45 mins or until you can easily pierce with a knife. Then simply scrape out the “spaghetti” and add a tablespoon or so of earth balance and season with s&p or even a dash of cinnamon.

  1. You should check out if you haven’t already. They come up with killer vegan recipes like vegan biscuits, chickpea ‘meatballs’, butternut squash veggie pizza, etc. Nearly everything I make comes from them.
