what it is: dinner of gardein beef less tips, brown rice, roasted acorn squash and salad greens with quartered artichokes, heart of palm and 3 bean mix drizzled with olive oil and balsamic.
how i did it: made brown rice according to my rice cooker’s directions. had my husband Rob cut the acorn squash in half for me and place face down on a pan in the oven at 350 for 45 mins. opened the cans of beans (rinsed them), quartered artichokes and heart of palm and added to the cold rinsed lettuce greens. sautéed beef less tips in a tblsp canola oil for about 8-10 mins. drizzled olive oil and balsamic and a dash of salt to salad and voila!!! now that says EAT ME
