I love making salad bowls-easy and satisfying meals. For this one I used the lentils from my “weekly basics” on top of organic speckled lettuce from my garden, a baked yam, spaghetti squash, roasted beets and kidney beans. I drizzle with olive oil, balsamic and a sprinkling of salt. EAT ME
This meal looks fabulous.

MANGIA!! MANGIA!! 🙂 Again, spaghetti squash is so underrated. The last time I used it my Hubby was amazed. He thought I was lying when I said it is just like pasta. The addition of the beans and the yam is extra yummy!
