From my “weekly basics” I used the brown rice with this delicious dish of tofu marinated in A-1 sauce (yep-it’s vegan) seared in a pan with canned mushrooms along with leftover spaghetti squash and broccoli. EAT ME

you have to cut it very thin and before putting it into the pan marinate it in soy sauce and salt. it gets very crispy when using more oil (nearly frying)
It’s a winter squash, when it’s finished roasting the flesh comes out in strands like pasta, which you can use in place of pasta, which is very good with marinara!

This looks really good, but I can never seem to cook tofu in a pan correctly unless I scramble it. It always seems undercooked. Any tips?
